Brem liquid or Brem Bali also called Wine Glutinous Rice is a beverage fermented from black glutinous rice. The process of making wine or Brem Bali is as follows :
1. Black glutinous rice is cleaned, washed and soaked for 8 hours.
2. Once clean, and steamed until cooked, cooled and sprinkled with yeast. Fermentation is done in a sealed container for 4 days.
3.The result of fermentation (tape) is obtained, then squeezed and filtered.
4. Fluid obtained from the screening, was diluted by adding water with the same volume ratio (liquid tape: water = 1: 1)
5. Next left at room temperature, in a closed container and allowed to form the desired amounts of alcohol (can smell from the smell)
6. Obtained and bottled drinks, pasteurized by heating 60-70 degrees for 30 minutes.
7. Furthermore brooded at cold temperatures (10-15 degrees) for example in air-conditioned room or basement. Curing carried out for 3 months or more.
8. The results obtained brem liquid form, or better known by the name Brem Bali. Label the bottle, and brem ready for the market.
